Completed the 'How to Make a Dressing' technique (pg 22-23) today... It called for lemon juice which I didn't have so substituted red wine vinegar instead... Also didn't have any tarragon...  So made a honey mustard vinaigrette sans tarragon... It's AMAZING how simple whisking can emulsify the oil into such a creamy looking dressing!  I may have to completely stop buying dressings since they take only minutes to create on the spot.... Plus I'll save space in the fridge and KNOW what's in the dressing!!

VERDICT: Brilliant technique that most people would think a waste of time.  My family however, simply loved the fresh taste it imparted and will have to keep trying different variations!
